Birollis frühe Arbeiten waren beeinflusst durch van Gogh und Ensor. Nach einem Paris-Besuch wandte er sich den Fauves zu und gründete 1937 die Künstlerbewegung Corrente mit. Ab 1947 lebte er in Paris und wurde hier durch Matisse und Picasso inspiriert. Etwas später entwickelte er seinen eigenen lyrisch-abstrakten Stil. Ab 1952 war er Mitglied der Gruppo degli Otto. Mehrfach nahm er an der Biennale und der Documenta teil.
